Chocolate and orange baked oatmeal

To be honest, I am not someone who hankers after the chocolate and orange combination, although it is a very classic combination. But I decided to give it a go, and combined the flavours with baked oatmeal. It turned out to be so good: sweet and tangy, suprising and subtle, that I have changed my opinion. The chocolate and orange unite exquisiteley; crispy bits of tangy orange peel gently realese their flavour, surrounded by velvety, smooth, dark chocolate flavoured oatmeal. It is a such a rich, gooey and decadent recipe and it keeps you going for hours!

Quinoa avocado sushi

Who doesn’t love sushi? I think it’s one of the few meals you could wake me up for in the middle of the night. Although, it takes a little practice, but creating your own custom sushi can be such a fun and very rewarding activity. Last week I had a great time with a lovely friend while making some quinoa avocado sushi rolls.

Baked sweet potato with cinnamon- peanutbutter

If I was forced to make a list of my top 5 most favorite foods, I would definitiely put sweet potato and peanutbutter on it. I never thought of combining them, but they truly are a match made in heaven. Sweet potatoes are such an amazing nutritional powerhouse and they offer a host of health benefits which far exceeds the nutrional value found in regular potatoes, for example they contain twice as much fiber. Not only are these orange- skinned root vegetables one of nature’s most unsurpassed sources of betacaroteen, they are also rich in vitamin C and E. These are all important antioxidants, which help to protect healthy cells from damage caused by free radicals and to strengthen your ability to help fight infection and disease.

Healthy single- serving double chocolate chunk cookie

Chocolate cookies are just about everybody’s favorite cookie, also mine. I created a single- serving recipe that incorporates a healthy twist to the classic treat. Apple pie overnight oats

Apple pie for breakfast, what a comforting yet refreshing way to start your day! These apple pie overnight oats have all the flavour of a traditional apple pie: slightly tender, yet crispy apple chunks, an intense cinnamon aroma, and sweet and juicy raisins, but combine them with the health benefits of oatmeal, a match made in heaven if you ask me. This is such a simple, but delicious recipe, which can be perfect on a busy morning, or can easily be enjoyed as a healthy snack or even as dessert.

Sweet potato brownies, simply the best

Follow my blog with Bloglovin

I often get inspiration for recipes on Instagram and recently I saw a lot of people baking sweet potato brownies, which immediately caught my attention, because who doesn’t love brownies? These are of course not the typical brownies loaded with refined sugar, flour and butter, but a healthy and still very yummy option. I decided to give my own twist to already used recipes, so here you go.

I must admit, at first glance, sweet potatoes in your brownie sound pretty weird, but they are great  way to add a lovely moist, fudgy and nutritious texture to your brownies. Sweet potatoes are such a nutritional powerhouse because they are packed with calcium, potassium, vitamins A and C, and they are a rich source of anti-oxidants. Sweetpotatobrownie. blog (1) Continue reading

Valentine’s chocolate covered strawberries

It has been a while since my last post, but I am back and with a new site! I wanted to launch a self- hosted WordPress blog with a personal domain name instead of a hosted blog which ends with ‘wordpress.com’.  As you guys noticed, I also changed my blog name. I thought that my previous name was too long and not catchy enough, so after lots of brainstorming I created ‘venividifoodie’, and I actually quite like it:) In the menu under ‘foodie’ you can read more about my name choice.

But let’s return to food matters, the topic I love to talk and write about. On my instagram you could already see my chocolate covered strawberries, the perfect healthy treat for Valentine’s day or any other special occasion. Strawberries and chocolate are such a glorious combination and a match made in heaven. Surprise your sweetheart or just yourself with this simple, but yet very elegant dessert.

Starbucks walnut banana bread makeover

I spent last summer in sunny Florida with my family and of course, we went a couple of times to Starbucks. I noticed that their banana walnut bread was highly popular, but despite its name, it’s unfortunately not a very healthy treat. I decided to adapt the original recipe into a healthy, but still very delicious option without all the butter, refined sugar and wheat flour that is jammed into a single Starbucks serving. This banana bread turned out to be such a lovely, dense and moist bread, redolent with banana flavor and will win over even the non- banana lovers.

Bright green smoothie

January is a time of fresh starts, new beginnings and making changes. This yummy, cleansing green smoothie is a perfect way to ring in the new year. I have been drinking green smoothies for over a year now, and I can highly recommend them to everyone! These drinks are made from fruit, leafy greens, for example spinach, and  liquids. Before you wrinkle your nose at the notion of drinking spinach, let me make clear something: the fruits will mask the taste of the greens! Believe me and give it a try!Greensmoothie 1
