If I was forced to make a list of my top 5 most favorite foods, I would definitiely put sweet potato and peanutbutter on it. I never thought of combining them, but they truly are a match made in heaven. Not only are these orange- skinned root vegetables one of nature’s most unsurpassed sources of betacaroteen, they are also rich in vitamin C and E. These are all important antioxidants, which help to protect healthy cells from damage caused by free radicals and to strengthen your ability to help fight infection and disease.
I spent last summer in sunny Florida with my family and of course, we went a couple of times to Starbucks. I noticed that their banana walnut bread was highly popular, but despite its name, it’s unfortunately not a very healthy treat. I decided to adapt the original recipe into a healthy, but still very delicious option without all the butter, refined sugar and wheat flour that is jammed into a single Starbucks serving. This banana bread turned out to be such a lovely, dense and moist bread, redolent with banana flavor and will win over even the non- banana lovers.
